Hi friends, today I am here with a sweet recipe which is an easy and simple pudding..
First, heat some desiccated coconut in a pan only until it gets a little dry and loses its moisture.
And when the desiccated coconut cools down completely, mix 2 tablespoons of powdered sugar into it and add a thin layer of this coconut and sugar mixture in the pudding tin and set it aside ..
To prepare the pudding mix, into the mixer grinder add a cup of milk, 4 tablespoons of sugar, 1 ¾ tablespoon of cornflour, and 3 tablespoons of milk powder and blend it until everything mixes well. Skip milk powder if you do not have it..
Next, add this mixture into a saucepan over a low flame and keep mixing it with a whisk or a spoon continuously until it starts to thicken up.. You can add white chocolate at this point too..
Never leave this mixture on the stove and move around.. continuously stir it until it starts to thicken..
When it thickens, immediately turn off the flame and pour it into the prepared pudding tin, that is layed with coconut..
After pouring this mixture, immediately transfer it into the refrigerator to cool, while we prepare the second layer of the pudding..
To prepare the second layer, add half a cup of heavy whipping cream into a bowl along with ¼ cup of powdered sugar and beat it really well until it turns into a thick cream.. next add a drop of red food colour which is totally optional and mix it to get a pink coloured cream..
Once the heavy whipping cream is whipped and ready, take out the pudding from the refrigerator and add the second layer, which is this whipping cream and garnish it with the remaining desiccated coconut and leave it in the refrigerator again to set, for around 1.30 hrs..
After 1.30hrs, take out and serve chilled!!
